  • 1/2 cup of Salt (For the cabbage)

  • 1/4 Grated Korean Pear (or Apple)

  • 1/2 Grated Onion


Seasoning:


  • 1/2 cup of Korean red pepper flakes

  • 1/4 cup of crushed Garlic

  • 2 Tbsp of minced Ginger

  • 1/2 cup of Fish sauce

  • 1/4 cup of Seasoned & Salted Krill (Korean Shop)

  • 1/4 cup of Sweet Glutinous Rice Flour

  • 1/4 cup of Sugar

  • 1,1/2 cup of Water


Instructions:


  • Prepare the Cabbage : Cut the Napa cabbage into quarters, leaving the core intact. Rub salt between the leaves and let it sit for a couple of hours until wilted.




  • Prepare the Seasoning : In a saucepan mix water and the sweet glutinous rice flour bring it to low-medium heat until it's all combined and thickened sit aside until cool. Mix Korean red pepper flakes, grated pear, matchsticks of radish and carrot, grated onion, chopped chives and green onion, garlic, ginger, and a touch of sugar to form a spicy paste.
















  • Combine Ingredients : Rinse the cabbage to remove excess salt. Spread the seasoning paste between the cabbage leaves and on each quarter.




  • Fermentation : Place the seasoned cabbage in an airtight container and let it ferment at room temperature for a few days (usually 1-2 day), allowing the flavors to develop. Or keep it in the fridge for two weeks before you eat it.

  • Enjoy : Your homemade kimchi is ready to be savored! Serve it as a side dish, add it to rice bowls, or incorporate it into various Korean dishes for a burst of flavor.
