How To Make Your Own Japanese Strawberry Daifuku


Ingredients:


  • 6 Fresh strawberries

  • 150g Sweet red bean paste (Anko)

  • 100g Mochiko (sweet rice flour)

  • 2 tablespoon Sugar

  • Potato starch or cornstarch (for dusting)

  • 100mls Water


Instructions:


  • Preparing the Strawberry Anko & Mochi Dough: Remove the stems of the strawberries. Split the premade anko into 6 anko balls. Shape a piece of anko so it’s flat and round. Hold the tip of a strawberry in the center and spread the anko up to the stem. Make sure to cover all sides and you will get 6 strawberry anko balls. Place the anko balls in a dish and cover with plastic wrap to keep them moist.


  • In a medium bowl, mix 100g of mochiko with 2 tablespoon of sugar. Gradually add 100ml of water while stirring to ensure a smooth consistency. Cover the bowl with a cling wrap (make a few holes with a toothpick) and steam for 15 minutes. Once is done the dough is sticky and translucent.





  • Shaping the Daifuku: Wet a rubber spatula and stir the mochi until even. Put the mochi on the baking sheet covered with potato starch. Dust the mochi with potato starch. Put potato starch on your hands. Like before, split the mochi in half and get 3 pieces from each half for a total of 6 pieces of mochi. Dust your hands with potato starch or cornstarch to prevent sticking. Take a portion of the mochi dough and flatten it into a circle. Place a anko strawberry ball we prepared earlier in the center. Gently wrap the mochi around the filling, pinching to seal the edges.





  • Enjoying the Delicacy: Dust the finished Strawberry Daifuku with potato starch to prevent sticking. Serve and savor the delightful blend of flavors and textures with each delicious bite!
